Go Italian!

I started raw diet again after a quite a long time. I always used to have my green smoothies & salads but I was not on raw food completely. Now I went raw on my birthday and its been 6 days now. I've been asked by my friends to share the recipes. I love photography and would love to have a great blog but due to limited time, here is my humble post.

Raw pasta

Ingredients:
Zucchini(half) 
Half Tomato cut into pieces
Few pieces of capsicum
2 spoons of sweet corn (optional)
Marinated mushrooms (optional)
Italian dry herb mix
1 spoon Virgin olive oil
Salt 
Chilli flakes (optional)
4-5 Cashew powder/soaked cashew paste

Use spiralizer to make Zucchini pasta. Else slice them thinly. Mix all ingredients and leave it for an hour or more for it to soften up.



My friends smelled it and they thought it was real pasta. And the mushrooms taste great! I marinate the mushrooms in apple cider vinegar for a day or more in the refrigerator.


Carrot soup

Ingredients:
1 large or 2 small carrots
4-5 cashews
Two spoons of sweet corn (optional)
Marinated mushrooms (optional)
Italian dry herb mix
1 spoon Virgin olive oil
Salt & pepper

Grind the 2 carrots and cashews with a little water in Nutribullet or blender. You can add additional water later. Mix the rest and tada, done! warm it a little if you feel like.

Discovering local foods

Reading books and hearing people speak about raw opens you to so many new raw foods.

I'm in Singapore now and guess what it is a land of mushrooms, goji berries and many asian greens. Thanks to the mix of cultures here, I get to know discover so many new greens, fruits, vegetables and many other foods.

My latest discovery is Jicama a white root that is crispy and tastes sweet. It is used in veg rojak.

I also discovered Miso the fermented soy and rice sauce. It is salty but good fermented food.

I also tried the Shiitake and wood ear mushrooms. There is a whole new world of mushrooms here. Visit a Chinese herbal stores near your place or in the China town.

And then there are herbal teas, chrysanthemum tea, Ginseng etc. These can be easily tasted in China town.

There are a lot of greens yet to be explored by me here. Mustard greens, water cress, bok choy etc. Then there is Ginger flower, lotus stems etc.

A world to explore out here and hope I get some time to do it and enjoy!

Raw banana stem salad

Hi there, I'm returning to raw foods again. I watched "raw for life" documentary to motivate myself. I also re-read my own blog.

I've shifted to S'pore and I miss my big garden back in Bangalore where I used to source my organic greens and vegetables. It was a large part of my life and it used to keep me happy.

I bough a nice fresh banana stem yesterday. We had 20 banana plants (8 varieties) back in my garden. We used to enjoy the fresh fruits, stems and banana flower. The leaves were used for Puja, cooking or for eating a meal.

You should use only the core of the stem discarding the outer layers. If you are buying from a shop this would already be done. Select the one that has no black, brown or red colourings. Chop it into really small squares and remove any fibres that come off. Add this to a bowl of water or a spoon of curd mixed it water. This stops the oxidation. Now take a fork or a barbecue rod and mix the chopped stems in circular fashion. It removes the fibres that is hard to bite.

Now do the tempering/tadka. Take a tea spoon of coconut oil (the best oil for cooking) or any other oil that you have. Add mustard, once it splitters, add urad dhal and chana dhal. Once this becomes golden brown add a cut green chilli and curry leaf. Add a little hing. Turmeric is optional.

Drain water from the banana stem. Add the tempering. Add a little salt. To this add some curd or thick buttermilk. Now if you are a vegan you can add a little lemon and some shredded fresh coconut.
Time to enjoy the crunchy banana stem salad!

My green smoothie



I try to have a green smoothie every morning.

Basic ingredients - Greens + fruit + vegetables(optional) + a little fat

Lettuce
Banana
half a beetroot
little seaweed
Dash of lemon and ginger
half a teaspoon of coconut oil


So whats on the right? They are 2 varieties of Purslane. They are good source of Omega-3 fatty acids. And the grass is Durva grass (what is kept for Ganesha). It is also known as Bermuda grass. Dogs/cats tend to eat this when they fall sick. So where did I get this? Oh just look around, these are weeds and you can find it in your garden or in your pots. I never knew about this and would de-weed my garden. Now these are wild foods, they are way more nutritious than the ones that are grown by humans.

In greens you can add anything available. Palak(Spinach), Moringa leaves (Drumstick leaves) , pudina(mint), coriander/ Dill leaves (sabaske soppu in Kannada). I tried moringa leaves raw recently, so I took them very little.This is what I was saying before. Don't think you cannot get raw foods locally. All these are easily available in India. Else where they use Kale, Celery, lettuce, mustard greens and many more. If you know any other greens that can be consumed raw, please let me know. India has huge variety of greens and I would love to learn about them.

Other ingredients that you can add
Flax seeds (Agasi in Kannada), carrots, apples, honey, and wild greens, chlorella, Spirulina , Ashwagandha, olive oil.


The easiest salad with sprouts


Green gram sprout salad



This is the simplest of all salads.

Sprouted green gram (whole moong)
Grated coconut
Salt/himalayan rock salt
Lemon

Mix everything together and tan-ta-da! Its very tasty. The lemon helps iron absorption.

How I started raw

Many people have asked me how I began eating raw.

I was never overweight till after my first pregnancy. I was diagnosed as hypothyroid during my second/third trimester. So 6 months after delivery I reached a maximum weight of 78 kgs,. I was never this fat and I myself could not come to terms with it.

I started researching what I could do. One day I read about Raw Diet on Internet. I started reading more and then I remembered my Mom had done raw diet for 3 weeks many years back. I remembered eating salads (kosambri) with her. I searched for a naturopathy institute where I could learn about this diet. But then my baby was very young and I had joined back work so I had no time to go for these courses, Internet and few books were my guide.

My Raw Diet
I started raw diet slowly. I used to have a green smoothie and some fruit/veggies in morning. Then 2 rotis/phulkas with salad in the afternoon. In evening I used to have my tea and bhel(with raw sprouts, tomato, onion, coriander and a bit of puffed rice ). Night I used to eat something cooked or raw.

After this I slowly proceeded to almost 95% raw. Morning, a green smoothie(not regularly) and huge bowl of salad. Afternoon a bowl of fruits with nuts, raw oats (and milk, which I stopped later). Evenings a cup of tea and raw bhel. Night used to be a light salad or fruits.I could not leave my evening cup of tea easily. But the second time I started raw, I gave up tea from the first day!

Somedays I used to be 100% raw :)

Exercise
In the beginning I used to exercise for 20 mins(cardio on few days). After that I had no time for exercise. I shifted my home, setting up home, setting up garden(we started growing our own vegetables) kept me physically fit. I joined yoga for a few months. Later gardening kept me fit.

Results
Coming to results. My weight reduced from 78 kgs to 58 kgs in a year or so. My hypothyroidism got corrected. My skin looked much younger. I had dark rough skin around my elbows and that got cured. I used drool during my sleep and that stopped. Due to eating at nights during pregnancy and while nursing, my gums used to bleed. That stopped. My dark circles around eyes reduced. My acidity vanished (I used to throw up yellow liquid while brushing my teeth most mornings). Finally I had a flat tummy :) This was what was visible.



My blood tests showed what was invisible. I had the perfect report. My hemoglobin was above 14. Ph was 7.45. TSH(thyroid) was normal. My cholesterol was on the lower end of the normal range. HDL was good.(I don't remember the numbers , but will put it up some other time.). I was one of the very few at office whose cholesterol was normal.

For people who start raw diet, here are my suggestions.

  • You can start slowly. Very few people can go 100% raw from beginning. Please listen to your body and go with whatever you feel comfortable.
  • Sometimes you are tempted to eat junk, dont give in easily. But in some cases its OK to give in otherwise you might hold back too much and one fine day you just gorge on junk food.
  • Never limit the amount of food, at least in the beginning. When you start raw you'll feel full quickly. So eat often and eat to your hunger. Keep loads of raw foods available at home so that you never run out of raw food(and be tempted by cooked food). I used to buy so many bananas in the beginning as though I had a monkey as a pet :D
  • Start reading books/websites and watching videos on raw diet. There are even good documentaries on this subject. It'll keep you motivated.
  • In the beginning you feel that not much variety of raw food is available locally.This is not true. Start exploring local foods. You'll be amazed that there is so much variety that can be eaten raw. (I'll write another post on this). Especially in India the variety of fruits and vegetables you get for raw food is just abundant! Nowadays you get lettuce etc quite easily.
  • Organic or non-organic? Organic is always best. But if you don't get organic don't stop. Just start eating raw even if non organic. But avoid eating raw cabbages , broccoli etc in which the amount of pesticides/chemicals is more. 
  • Vegetarian or Vegan. I was vegetarian from beginning. I love curd. So I still consume curd. My consumption of milk is almost nil.I don't get good quality raw milk, so this alone is not raw.
  • You'll soon learn on different groups of foods to include in your diet. In the beginning you might eat more of fruits and nuts(carbs and fats), since they are comfort foods. But later on try to include more greens and  vegetables.
  • Keep some raw food always handy(nuts, carrots, fruits like apple, banana) so that you don't reach out to junk food (like biscuits, chips) when you are very hungry. I've done that many times. I used to pick up some junk food while leaving office because I would be stuck in traffic while driving back. 
  • Eat lots of variety. There are so many fruits and vegetables to discover. There is so much variety on Earth that you can eat one new food every single day of your life and you would still have not tasted all food on this planet(David Wolfe). Eat seasonal foods.
  • Last but not the least your body starts detoxing once you move to raw diet. If you transition slowly the detox too will happen slowly. If not, detox will happen fast. You might pass motions many times a day (2-6). All your toxins are getting thrown out. Don't worry(on the color or any other aspect of motions :) Since you are detoxing, make sure you are having enough liquids (or water) and nutritious foods. Never limit food quantity in the beginning.


Once you start raw diet your body will start craving for raw foods. Even if you consume junk once in a while, your body will automatically come back to raw foods since your taste buds have changed :)

My daily salad



My usual salad. The ingredients vary according to season and what is available at home :)
The must items in a healthy salad are greens, fats and proteins (sprouts).

Ingredients
Lettuce
Tomato
Capsicum (more the colors the better green, yellow, red)
Cucumber/carrot/zuccini

Optional ingredients
baby corn/sweet corn/peas
Sprouts (green gram/alfa alfa )
Pudina

Dressing
Groundnut(peanut) powder (I started with roasted peanut but now moved to raw peanut powder)
Grated fresh coconut
Salt/himalayan rock salt
Lime juice
a bit of jaggery(optional)

Just mix everything together and eat!

Non fluoridated toothpaste

I was in search of a good non fluoridated toothpaste for a while. Now I got one. Its "K.P. NAMBOODIRI'S". It is a herbal toothpaste from Kerala in India. I've tried other herbal toothpastes but they do not explicitly mention that they are non-fluoridated. This one does :)

The ingredients listed are: Calcium carbonate, Glycerine, Water, Dicalcium Phosphate Dihydrate, Sodium Lauryl Sulphate, Extracts of Ginger, Black Pepper, Long Pepper, Terminalia Chebula, Gooseberry & Liquorice, Camphor, Menthol and Clove oil, Sodium Carboxymethyl Cellulose, Red Ochre, Silica, Sodium Benzoate and Sodium Saccharine.

Raw shopping at Russel market


How colorful can it get? Imagine you are going to get all those colors along with their vitamins, minerals, anti-oxidants into you! Your life will get as colorful & radiant as these vegetables & fruits!

How true .. food is your medicine & medicine your food.

Where did I buy all this ? I went to Russel market in Shivajinagar one early Sunday morning. This was my first visit and I should say it is a heaven for raw foodists. You need to go very early like before 8am to get  Lettuce, Asparagus, Bok-choy, Brussel sprouts, Zucchini etc. All these are sold to the restaurants in bulk so by 8am these veggies go out of stock. I was the only retail buyer here.

Coming to fruits there is a shop solely for butterfruits (Avocados)! You also get seasonal fruits like mangoes, pears, grapes and some exotic ones like Mangostean, Figs, cherries, plums, Kiwi. There are lot of fruits I still need to discover here.

The more local veggies that can be eaten raw like Beetroot, Carrots, Bell peppers(Capsicum), Kohlrabi are also available. While selecting vegetables and fruits include a lot of variety and color. Include green, red and yellow Bell-peppers. Green and Yellow Zucchinis.

You also get a wide variety of local greens but I restricted from buying them because I don't eat non vegetarian food and there is a meat market close to this. However, I could not resist from buying fresh Lettuce, Chinese cabbage as I don't get it easily else where in Bangalore.

Kohlrabi salad

  • Select tender Kohlrabis. The bigger ones have rough fibers in them.
  • Peel the Kohlrabis and slice them finely like matchsticks (half the height of matchsticks).
  • Add grated coconut, finely chopped chilli and salt.
  • If you are still not used to eating raw, heat a teaspoon of coconut oil, add some mustard, few chana dhal & urad dhal, some curry leaf and a bit of Asafoetida. Add this to Kohlrabi.
  • If you want 100% raw, then add a teaspoon for coconut oil and a little lime.
  • Mix well and serve!
Kohlrabi is know as Navil Koos in Kannada, Nool Kol in Tamil. It is also know as knol-khol.

Asparagus soup

Chop the Asparagus tips finely. I boil the remaining shoots so that is smooth. You could keep it raw. Make a smooth paste out of it by adding a little salt. Add freshly ground pepper. Add some lemon juice or a little curd. Add the finely chopped asparagus tips. It tastes yummy!

Raw carrot and asparagus soup

This is a simple and tasty soup.

Ingredients
  • 2 carrots
  • 5-6 asparagus
  • 2 cloves of garlic and a small piece of giner
  • sea salt
  • pepper
  • milk (optional)
I chop the tender tops of asparagus and keep them separate.Boil the harder shoots below separately (if you want you can use them raw too). Clean and chop the carrots.

Grind Carrots, asparagus, garlic, ginger and salt in a food processor by adding water as required.

Add freshly ground pepper and a little milk.  You can warm it a bit if required. Serve!

Most of the raw foods mentioned on the Internet are not found easily in India. Even if they are found, the local names differ. Recently a lot of foods like Zucchini, lettuce is found in supermarkets. Below is the list I've compiled. I'm still investigating and trying out what veggies and greens available locally can be eaten raw. Thanks to my parents, we used to eat quite a few greens and veggies raw at home.

I'll give names in local languages and keep updating it as my knowledge increases.

Go raw.. my first post

This blog is about raw food. I'll share my insights, some recipes, where to find fresh veggies, fruits, organic food etc. I'll also write about my organic kitchen garden where we grow fruits, vegetables and greens. I'm not 100% raw yet, but I'm mostly 60% or more raw. I've shed almost 17 kgs of weight mainly due to my raw foods.

I've read David Wolfe's The Sunfood diet and Superfoods. Also "Healing the Gerson way" and "Why suffer - Ann Wigmore". All these are great books.

I haven't seen much of raw foodists in India. I know India has roots of raw food in Naturopathy etc. My mom did a three week raw diet and at that time I did not understand its true benefits. I was searching for some naturopathy course but did not find one. So my journey of raw food is my own and the Internet was/is a vast source of information and inspiration. Since there will be others in India who might be interested in raw foods, I'll share information on raw foods in India.
